Marinades and such
Over the years I’ve had many friends and guests tell me about a wonderful marinade they recently used or had tasted. Great I say, more often than not. But if you ever have a meal I’ve prepared, rarely, perhaps once a millennium will you experience a marinade on a dish served on my table.
Why? For the most part they don’t work on meat. People have told me their marinade really “soaks” into the meat and the flavor goes all the way through. Horse puckie! Sorry, it does not work that way.
Meat is made mostly of water so it does not absorb much of anything.
Below is a link to a recent article in the L.A. Times which explains why marinades don’t work in more detail. http://www.latimes.com/food/dailydish/la-dd-marinade-20150810-story.html
