MAPLE-SRIRACHA GLAZED CHICKEN DRUMSTICKS

This easy recipe, which made its debut on Super Bowl Sunday, proved so popular that it’s now transitioned to a summertime favorite. We expect to see it during fall tailgating season as well. Meaty chicken drumsticks (preferably organic) are brined, indirect grilled over medium-high heat until the skin is crispy and golden brown, then glazed with an addictive sweet-hot mixture of maple syrup, sriracha, and butter. The glaze is great with wings, too. Wood smoke is optional. For maple syrup, we love the syrup cameraman Jonathan Nichols brought to the set of Project Smoke 3 from his family’s picturesque farm in Vermont.
